This is a great thread. and I may come asking for helpful hints. Ihave have even come up with a chicken fried steak mashed potatoes gravy with very little fat and it curbs my craving for beef.

There are so many different ways you can fix something like that. I forgot to mention boiled eggs. We aren't vegans by a long shot, but we enjoy many vegetable dishes. My wife has a talent for creating great salads, which has helped me make healthier choices without feeling like I am missing out.

I have made it no secret that I have gone Vegan. No I am not a radical Vegan. My family still eats beef, fish, and dairy. This was a choice for health for me. My cholesterol has dropped 100 points and my weight continues to go down. Yes I get plenty of Protein in my diet.
The low carb cauliflower dish reported below is a fantastic one. I have it about 2 times a week. Instead of mayo I use one tsp of molasses it gives it that buttery flavor mixed in also is a few tablespoons of rice or soy milk. Just depends on what I want to use that day.
Vegan by far is not for everyone but the results have been amazing.

My wife and I are into the low carb thing. She made a great "Unpotato salad" tonight, it was really great. She made it with cauliflower just blanched, after it cooled she added red onion, 1/4 cup of ,apple cider vinegar, mayo and seasoned to taste. It tastes great and you don't feel weighed down from potatoes.

O.K., so I will go ahead and start a thread with a few cook books and other health related books I like, with a short review for each. Look for this thread in the Sleep Apnea Book Club Group. If you want to add your own favorite cook books, please add your opinion or experience using the book.
