I was recently diagnosed with sleep apnea and started using a CPAP in the last week. I've noticed after 1 or 2 hours, I am throwing off the mask in the middle of the night. I don't think I've woken up with the mask on. I'm using the standard CPAP on level 7 with just the nasal mask (not the full mask or the pillows).

I'm not sure if this is because the head piece is tight/uncomfortable, I am not using the humidifier high enough or I am mouth breather and it seems it is harder to breathe through the night? Or maybe I will get use it?

I have small sinuses and enlarged adadanoids, as well as large tonsils and the doctor recommended I get surgery for this- any recommendations there?

I've also tried the device in combination with something like a chin strap www.mysnoringsolution.com

Any advice of how to remedy my issue and not through off the mask?

It could be any of the things you mentioned above. what caught my attention especially is that you say you're a mouth breather. that means you are having trouble breathing through your nose. have you seen an ENT or allergist about this? if not, that would be a good avenue to pursue. once you are able to breathe through your nose, i suspect the mask will become more tolerable. as a first step, i'd also increase the humidification and see whether that helps at all. the general rule of thumb is to try one thing, see what happens, then try the next thing -- not to make more than one change at a time so that you're able to isolate whether the change is working for you.
