Not sure about the Canadian requirements, but here in the US you don't need any documentation to bring the CPAP on board. All airline personnel I've dealt with have been very experienced with seeing/ handling CPAP machines. They're required to allow you to bring it as a carry-on and not have it count toward your maximum # of items.
As for traveling to Florida, I'm jealous -- it's nice there this time of year. Yes, i believe it's humid in South Florida this time of year. Best to bring the humidifier though. You can always set it at a low setting or at zero if you find you don't need it.

Florida is humid ;air conditioning dries the air. So it depends where you will be sleeping.
At the security check for carry on luggage:
1. Remove the CPAP device from the case
2. Place the CPAP in a separate container and roll it into the scanner
3. sometimes they check, and sometimes they don't.
4. if you forget to remove it from the case, you will have a longer time there while they ask you to open the case, take it away for testing, and pass the time by searching you until the CPAP is cleared.

I picked up my CPAP machine yesterday and I asked them what happens if I want to travel to Europe where I am originally from - They said because that the CPAP is a medical device you can carry it on the plane and use the over head compartments.
Maybe a quick call to your sleep study center will shed some more light on the subject.
