Is it possible to identify the cause of death as sleep apnea from an autopsy?

I suspect not and that is what such a serious disorder has such a low profile.

I don't believe so. it is typically the effects of apnea that get you.
Generally the ruling is due to

Co-morbidity, and was the patient currently compliant or non-compliant with treatment. Occlusion of the throat can be determined at autopsy (tongue wells anyway at time of death). Non-witnessed sudden cardiac death due to fatal arrhythmias maybe diagnosed in the same way at times.
