Where do I start?

I have no clue how to go about dieting. Never done it before. Never thought about it. But I have to. How do I know how many calories to eat and what forms they should take?

    Transitioning to a more healthy eating style.
    In my weight I am all over the place up one month down the next. Then of course there is the hospital cafeteria. The food there should be outlawed! I am not talking because it is bad it’s the crap they feed the staff and visitors. Fried chicken liver, smothered beef liver none of that temps me to eat. Then of course they have the Texas Stand- by which is double portioned chicken fried steak gray fries and mouth watering coleslaw. Served up with a side of pecan cobbler.
    Just one day I said enough is enough! And went straight to veganism. That was a disaster. Rapidly fell off the wagon. I have found that the transition for me has to be slow. Oh yes and uncooked live foods. That was a disaster too. I quickly discovered a multitude of allergies. Steamed veggies are the way I have to proceed. Why can I eat steamed and not raw NO IDEA! Allergy shots were not the plan for my lifestyle change.
    Protein serving size for me is about the palm of my hand or deck of playing cards. No Gravy…Oh gravy my downfall. Portion control had been a real issue for me. When I become tired or fatigued I want to binge. Gained control over binge by eating an unsalted rice cake and 12 ounces of water. In just a few minutes I am stuffed due to expansion of the rice cake.
    The Rice cake and water also helps when taking the family out to dinner. A small salad does me well and all appetizers are waved off from the table.
